Ingredients

  • 1 tin Nestlé MILKMAID
  • 2 Medium Ripe Mangoes, cut into small cubes
  • 2 Medium-SizedApples
  • 1/2 Medium Ripe Papaya (Small Cubes)
  • 10 Medium-SizedPalayankodan Bananas, finely chopped.
  • 1/2 cupDeseeded and Chopped Dates
  • 100 gramsCashew Nuts
  • 1/2 cupSugar (or according to taste)
  • 8 tbsp + 4 cupsMilk made from Milk Powder (Milk Powder+ Water)
  • 6 tablespoonsGhee
  • 1/2 teaspoonCardamom Powder

How to make Fruity Payasam

  • Step 1: In a traditional Uruli (Brass Vessel), heat 2 tablespoons of ghee.
  • Step 2: Once the ghee is slightly hot, add the chopped fruits and dates. Sauté for 5 minutes or until tender.
  • Step 3: Add 1/2 cup of water and cook for another 5 minutes until the fruits are almost cooked and become mushy.
  • Step 4: Now add the sugar and sauté for another 5 to 7 minutes, adding 2 tablespoons of ghee intermittently.
  • Step 5: When the fruits and sugar mixture start changing color, add the milk and mix thoroughly. Boil for 5 minutes.
  • Step 6: Reduce the flame and add Nestlé MILKMAID, stirring well to mix properly. Avoid further boiling.
  • Step 7: Once the payasam is thoroughly heated and reaches a slightly thick consistency, remove from the heat.
  • Step 8: Add cardamom powder and mix well.
  • Step 9: In a separate pan, fry the cashew nuts in the remaining 2 tablespoons of ghee until golden brown. 
  • Step 10: Pour the fried cashews over the prepared payasam as a final garnish.
  • Step 11: Serve the Special fruit payasam hot or cold. Enjoy this delicious treat!

Please Note:

  • Sugar is required for sautéing with fruits; otherwise, the fruits will have a sour taste.
  • Since we are using fruits, it is better not to use regular milk but rather powdered milk since it may curdle due to its citrus content.
