Milkmaid Fruit & Nut Bar Recipe

Ingredients

    Nestle Milkmaid
  • 340 gms
    All purpose flour (Unbleached)
  • 300 gms
    Dark Chocolate
  • 100 gms
    Mixed Kaju (Cashewnuts) and Almonds
  • 50 gm
    Sultanas
  • 6 tbsp (90 ml)
    Ice Water
  • 3/4 cup (170 gms)
    Cold Unsalted butter
  • To garnish
    Chopped Nuts
  • 450 gms
    Sugar
  • To taste
    Salt
  • 1
    Vanilla Pod

INGREDIENTS

Tart Base : 2 1/4 cups (340 g) unbleached all-purpose flour, 120g unsalted butter, 6 tbsp (90 ml) ice water, Salt to taste

Milkmaid Fudge: 400g Nestlé Milkmaid, 450g of sugar (or as per taste), 2/3 cup milk, 3/4 cup (170 g) cold unsalted butter, 1 vanilla pod

Tart Filling: 100g mixed almonds and cashews, 50g sultanas, 300g dark chocolate

Garnishes: Microgreens, Edible Flowers, Chopped Nuts

TART BASE

Put flour, salt, butter and water in a processor and pulse until the dough forms. Place the dough in cling film and refrigerate.

Roll out until 5 mm thick and cut rectangle shape. Cut some 2 to 3 cm strips to the inside and create a rectangle box. Bake until golden at 170 OC for 10 to 15 minutes.

MILKMAID FUDGE

Pour Nestlé Milkmaid, vanilla pods, sugar (as per taste), milk and butter in a non-stick pan. Gently heat and cook it down at low temperature until it begins to thicken & becomes an oozy fudge, as shown in the video.

TART FILLING

Roughly, chop some nuts. Sprinkle in rectangle cavity of tart along with sultanas.

Melt some chocolate buttons in a bowl in microwave or in a non-stick pan on flame.

FINAL PLATING

Pour the milkmaid fudge in our tart base up to 2/3rd of the way. Put melted chocolate on top and spread with a palette knife. After it cools down, place the tart in middle of a plate and garnish with some thinly diced almonds, cashews, flowers and greens.
